Really interesting points, thank you for sharing. Would you say (other than Ethiopia) Colombia as a origin has the most potential to display coffees with wider spectrum of flavour profiles?

I think what is really interesting about Colombia is the investment in post processing and fermentation protocols that are changing the flavour landscape for coffee. I think Colombia is rapidly becoming the country to look to from a research and development stand point. It’s definitely an exciting time for coffee.
