200 of these have been spent thinking about this project.
180kg of fresh coffee cherry delivered to Rwamatamu washing station on June 13th has yielded just over 17kg of Green coffee landed in the UK around 4 weeks ago.
10:1 is the ratio of coffee cherry to the final product in most instances.
So for every Kilo of cherry delivered that equates to 100g of raw product good for export. I know you could have done the maths on that but I just wanted to point out the realities of specialty coffee production.
A standard shipping container can hold 19,200kg of exportable green coffee - I will let you do the maths on that one…
Sample material is always limited, if you can, pay for your samples…
I have sat on these samples for over a month now. Why? you might ask…
because I needed the time to analyse the results for myself, quietly, with no noise.
because I needed to find some willing evaluators to cup the results and validate.
because I just needed the time to figure out the intended purpose of this experiment.
When the initial conversation started around the use of commercial yeast and its intended benefits on coffee production it was all about creating flavour. The original concept was to run a few small trials and maybe learn something in the process.
I had been itching to visit Rwanda for as long as I've held a cupping spoon so you can imagine my response when discussions turned into reality. I never for one second thought that my obsession with yeast and my constant link-sharing of LUCIA SOLIS'S podcast would see me booking a flight to Kigali and putting theory into practice.
But here we are…
Anyway, I am slowly starting to put together the pieces on what has been a pretty hectic but very enlightening year and the evaluation samples are now roasted and ready to be posted.
I have held some sample material back and put together a sample pack from the three trials for paid subscribers of the Tonic and this will be posted today.
For everyone else who would like the opportunity to try a selection of the samples I have uploaded what is left to my website, unfortunately there is only limited supply and it hasn’t been possible to offer all of the samples but, there is still a small selection if you wish to purchase them. All samples have been roasted and will make a good couple of brews.
